Are you referring to downloading the PDF materials or the mp3 audio materials. I am including some instructions on these below.
Instructions on downloading PDFs from the OLC and adding to iBooks (from an ipad)
From the ipad when you are in an online course, you can click on a PDF which will open in your web browser e.g. Safari. When you have it open you can then click on the ipad share icon and select to copy the file to iBooks. It will then be saved in your iBooks library for future reference from your ipad.

Then if you wish to download the mp3 audio files the easiest way to do this is download them on your computer and add them to iTunes and then sycn them via itunes to your iphone or ipad. Apple do not make it easy to download mp3 files direct from Safari to a mobile device and it needs to be via itunes unless you use a complicated work around.

As mentioned above Apple do not allow mp3 files to be easily downloaded direct to an ipad but if you do a search on the internet for how to download mp3 files to ipad you will find some advice. Some recommendations include using the ical mobile web browser which seems to allow downloads or other options
Some other advice was received on this in a previous post at https://onlinelearning.fpmt.org/mod/forum/discuss.php?d=2088 but if you have a computer and itunes then that would be far easier.
