Thanks for your post in this FAQ and Technical support forum. However there might be more replies to this post if you post it in the Discovering Buddhism forum at https://onlinelearning.fpmt.org/mod/forum/view.php?id=1343 as that forum is for questions related to course content and is read by many more users and also monitored by some experienced elders.
My understanding is that that the Treasury of Manifest Knowledge by Vasubandhu (Abhidharmakosha) would be a good place to look for the teachings of the Buddha where he laid out teachings on the universe and how they evolved. This text sets out a detailed presentation of the constituents, faculties, Buddhist cosmology, the six realms, karma, the afflictions and their antidotes, the various types of spiritual practitioners and their paths, and the knowledges, concentrations, and absorptions. This text is studied in the FPMT Master's program and is an advanced text to study.
My recommendation would be to start with a text by His Holiness called 'The Universe in a Single Atom' which you can see at http://www.amazon.com/The-Universe-Single-Atom-Spirituality/dp/0767920813 as i believe that text will outline some of the key teachings on Buddhist Cosmology in a very accessible manner.
